FIRESIDE CHATS

Growing up, my family had a tradition of friends and family stopping by our home for coffee and my mother and grandmother’s homemade cakes around the kitchen table. We enjoyed each other's company, laughing and sharing stories.

I’d love to recreate that spirit of connection and invite a few friends for a seasonally flavored coffee and a fireside chat to study my new book, “Hold Onto Hope.” We'll enjoy a gourmet brunch by the fireplace or outdoors, walk in the pasture, connect with new friends, unwind, and engage in meaningful conversations.

Space is limited to 5-8 people for a cozy gathering.

Today’s Special

Chicken With Lemon and Capers

This recipe is easy and light and perfect for dinner on the porch or light lunch with friends.

FOR CHICKEN

1/4 cup of butter

2 tablespoons of olive oil

2 large chicken breasts sliced into four thin cutlets

1/2 lemon

1/2 jar of capers

1 teaspoon tarragon

Salt

Pepper

1/2 cup of white wine

1 clove garlic (shredded)

FOR SALAD

2-4 cups of arugula or spring mix

2 tablespoons Primal Kitchen Green Goddess Dressing w/marinade and made with avocado oil (my favorite and recommendation but you can use your own dressing)

1/2 cup of cherry tomatoes

1 tablespoon of olive oil

Salt and pepper both sides of chicken. Warm olive oil and butter in saute pan and add chicken. Cook on medium heat until chicken is white and slightly browned. Turn up heat for a few minutes to add 1/4 cup of wine until it it’s absorbed. Turn heat down to low and add lemon, capers, tarragon, garlic, and last 1/4 cup of wine. Cook on low until liquid is slightly dissolved and thicker.

Grab your 2-4 cups of arugula or spring mix and place in a large bowl. Drizzle with olive oil and a pinch of salt. Mix with your hands until leaves oil and salt coat the leaves. Add the cherry tomatoes sliced long as well as the Green Goddess Dressing and mix.

Serve chicken atop the salad and prepare a small bowl of Italian bread slices and butter.

I serve this dish with a glass of white wine or La Croix.

BONUS:

Place your dinner in a lovely basket with napkins and utensils to carry to the outside table.

Enjoy spring or summer china in white or adorned with sunflowers or pretty spring pattern.

Place fresh flowers on the table.
